Heart of the Forest Farm

Hericium coralloides - aka Coral Tooth Mushroom

 We are delighted to be testing our first beautiful wild cloned Coral Tooth mushroom from Danbury, NH this season (pictured above). Although we do have a good supply of cultures, we prefer to only sell after a successful test on logs. This project is dear to our hearts and mission, as working with the lion's mane family for its proven cognitive benefits is a primary reason we chose to cultivate mushrooms.


Outdoor Hericium cultivation is challenging, but research shows that wild strains may outperform commercial strains in agroforestry systems. Learn more about this project and our goals in an upcoming newsletter/blog post. 


Our test logs will incubate through the spring, and if all goes well, they will come out to play in late summer of 2025. Subscribe to our newsletter to follow this experiment from wild to wherever we end up...

Hericium sp. (Lion's Mane, Bear's Head, Coral Tooth) shelf life and storage:

  • Store in fridge 7 to 14 days - always refrigerate and thoroughly cook all varieties of fresh mushrooms
  •  Can be frozen after par cooking
  •  Can be shredded by hand and dehydrated until crisp, then stored up to 1 year in an airtight container - always review food safety guidelines when preparing food for long term storage!
  • Gently brush or trim away any debris and avoid submerging in water

Flavors and Uses:

  • Soft, mild, lightly chewy flesh with long "teeth" instead of gills
  • We recommend shredding into bite size pieces by hand instead chopping
  • Sweet, mild seafood flavor that reminds us of crab
  • Studied extensively for health benefits
  • Dehydrated mushrooms can be used to brew tea and strained solids added to recipes for a double nutritional boost

 

Identification: (Do not consume any mushroom without positive ID!)

  • Habitat - Grows on decaying wood
  • Fluffy, branching white to pale cream fruiting bodies 
  • Indistinct stem
  • Long downward facing spines or teeth 
  • Inner flesh is white, flesh is soft 
  • Spore print is white 
  • Season - Late summer to early fall

Cultivation:

  • Cultivation difficulty - intermediate to advanced
  • Mainly grown indoors on supplemented sawdust blocks, outdoors on logs with a low success rate (we're working on changing this!)
  • Requires well regulated growing conditions 
  • Season - year round indoors, late summer through fall outdoors
