King Oyster aka Pleurotus eryngii

Shelf life and storage:

  • Store in fridge 7 to 14 days - always refrigerate and thoroughly cook all varieties of fresh mushrooms
  • Can be frozen after par cooking
  • Extremely dense flesh requires longer cooking time
  • Edges of mature caps can be delicate, avoid crushing

Flavors and Uses:

  • Extremely firm, dense and meaty with a very light, faintly sweet flavor 
  • A favorite in vegetarian and vegan dishes
  • For more tender king oysters, we recommend slicing thin or shredding & marinating overnight before cooking
  • Can be frozen after par cooking
  • Good choice for pickling & dehydration - always review food safety guidelines when preparing food for long term storage!


 

Cultivation:

  • Cultivation difficulty - advanced
  • Grown indoors on supplemented sawdust
  • Requires very specific conditions
  • Season - year round indoors, dependent on temperature
